A proxy is a go-between. Most often it is used by businesses so they can cache websites, limit access to some sites if they want to, or see if you are accessing sites that you shouldn't be when you should be working. An example of a web and ftp proxy is squid: https://en.wikipedia.org/wiki/Squid_(software)
It cannot see your screen, or apps, or passwords to secure websites, but it can see everything that you access on the web. Some people use a 3rd party proxy to hide their IP, but that is somewhat pointless unless you are doing something illegal, and do you think that the proxy owner is going to want to take the flak for that?

A proxy is a throwback to a time when internet connections were slow, they acted as a go between for you and the internet, they would store copies of websites more locally so that when you asked they themselves gave you the content. they are still in use as they give a level of identity protection as its not you that is asking for the website its the proxy and the proxy passes it to you. As for seeing screen they are just as secure as you going on the internet, as long as you are connected to a reputable proxy and not just any old free one then a seure connection is still secure, if you use a free proxy then you get what you pay for, they might then be setup to play man in the midle and steal passwords,but not see your screen

Proxies don't work anymore since web browsers use a new technology called WebRTC to identify you.
